Fancy some chocolate banana nice cream?
Last summer in Helsinki I was walking in the city with my friend. We both started craving for some sort of ice cream. Finnish people love their ice cream in summer and there are ice cream shops in every other corner in the city but I don’t use any dairy products any more, except some occassional cheese. Of course, there are always some sorbet options but I was craving for chocolate ice cream. So instead, I went to a grocery store and decided to make my own nice cream. This is what I came up with…
Choc Banana Nice Cream Recipe
Makes 2-3 serves
2 tbsp cacao powder
1 tbsp peanut butter
1 dl oat milk (or other plant based milk)
A few nuts such as hazelnuts
Few cacao nibs for decoration
How to make:
- Slice bananas, place them in a container in a freezer for about an hour.
- Add banana slices, cacao powder, oat milk, dates and peanut butter in a blender. Blend for 1-2 minutes.
- Place the mixture in glasses, and sprinkle some nuts and cacao nibs over top.
Note: If you don´t like it too sweet, you can start blending the ingredients without dates. If you like it sweeter, add one date first, taste the mixture and if it still needs a touch of a sweet taste, add the second date in a mixture. Blend well.
